Avocado Green Onion Dressing+ Kale Crunch Salad
Avocados are one of those amazing foods that can enhance almost any dish. Not only are they delicious, they are full of fiber and good fat so they provide long-lasting energy. Sometimes I’ll sprinkle sea salt on half an avocado and eat it directly with a spoon for a quick snack or light breakfast.
If you only have a few ingredients on hand you can make a pretty awesome salad dressing by mashing an avocado with lemon juice and olive oil. For something slightly more complex, try my Avocado Green Onion Dressing. It’s so creamy and flavorful, just add kale and you have the perfect side salad!
Avocado Green Onion Dressing
yields 1 cup
What you’ll need:
- 1 avocado, removed from peel and pitted
- 1 tbs Bragg’s Liquid Aminos (you can use tamari if you don’t have this on hand)
- 1 tbs apple cider vinegar
- 2 green onions, chopped
- juice of half a lemon
- 4 tbs water
- 1 clove garlic
- 1 tbs olive oil
- 1 tsp agave
- 1/2 tsp sea salt
- 1/2 tsp ground pepper
Directions:
- Blend all ingredients in blender until completely smooth. Store in refrigerator for up to 3 days. Add to everything!
A simple kale salad with this dressing can be a great base for a veggie burger or side dish for grilled vegetables. I recently used this dressing on Kale Crunch Salad. It was the perfect lunch- crunchy, creamy, sweet and tangy.
Kale Crunch Salad
Serves 4
What you’ll need:
- 1 cup cherry tomatoes, cut in half
- 1/4 cup sliced olives
- 1/2 cup raisins
- 1/2 cup sunflower seeds
- 1 cup carrots, diced
- 1 bunch kale
- 1 batch Avocado Green Onion Dressing
Directions
- Chop and rinse kale.
- Add dressing and massage into kale with hand for about a minute.
- Add remaining ingredients, mix and serve right away!
