Making Everyday a Sunday

Good morning friends! Today I would like to share a quick and easy breakfast recipe that’s nutrient-rich and protein-packed. This Breakfast Sundae has it all- fiber and omega-3 from flaxseed, antioxidants from berries, potassium and vitamin b-6 from bananas, and protein from almonds and tofu. It’s a decadent dessert for breakfast that provides long-lasting energy for a day at the office, school or hiking trail. Everyday will feel like a Sunday!

This recipe calls for Coconut Sweet Cream which you can find the recipe for in this post: Rainbow Pride Parfait. This part of the sundae takes a little bit of prep work but once you make the coconut sweet cream it will stay good in the refrigerator all week. Trust me, you’ll find good use for it!

Breakfast Sundae

makes 1 sundae

What You’ll need:

  • 1 banana, peel and sliced
  • 1 tbs ground flaxseed
  • 1 handful almonds
  • 1 large scoop coconut cream
  • 1 handful berries

Directions:

  1. It’s so simple! Follow the image below and layer the ingredients in the following order: banana, almonds, flax, coconut sweet cream and top with berries.
