Juice and smoothies are one the easiest and tastiest ways to incorporate more fruits and vegetables into your diet. There are tons of awesome organic juice bars out there, but unfortunately there are also many companies that advertise their juice and smoothies as being healthy, when they are actually filled with tons of sugar and artificial ingredients. A common find on these company’s menus is a coconut smoothie, but made without fresh coconut or coconut water!
Last week I wrote about the all the health benefits of fresh coconut in my post about Raw Coconut Thai Soup. Today I would like to share another recipe that uses young thai coconuts, the Coconut Colada Smoothie. This tropical smoothie is sweet and creamy, and the list of ingredients is very short! It’s full of tons of Vitamin C, potassium, iron and healthy fat that will supply you with long lasting energy throughout the day.
Coconut Colada Smoothie
makes 2 servings
What you’ll need:
- Meat and water of 1 young thai coconut
- 1 mango, peeled and pitted
- 1 banana
- handful of ice
- Open coconut, empty water into cup and scrape out the meat.
- Blend all ingredients in blender until smoothie and enjoy right away!
Don’t forget you can always make your smoothies green! I made another batch and added 2 cups of spinach, then topped it with banana slices and granola and enjoyed it as a green smoothie bowl!
