Summer Salad+ Agave-Mustard Dressing

Who doesn’t love a good salad? They’re colorful, they take very little time to prepare are they are the perfect way to combine seasonal ingredients- but I’ll be the first to admit that it’s easy to get stuck in salad rut! I’ve definitely had the same salad with the same dressing one too many times! Let’s switch up our salad routines with this Summer Salad and Agave-Mustard Dressing.

Agave Mustard Dressing is sweet and tangy and much healthier for you than it’s store bought cousin, honey-mustard. You can also use it as a marinade for tofu and cooked vegetables or on your next sandwich or wrap!

Summer Salad 2

Agave-Mustard Dressing

makes 4 servings

What you’ll need:

  • 2 tbs dijon mustard (make sure to look for all natural)
  • 1 tbs agave
  • 1 tbs gluten-free tamari
  • 1 tbs olive oil
  • 1 tbs apple cider vinegar
  • juice of half a lemon

Directions:

  1. Mix all ingredients together and store in the refrigerator until use.

Agave Mustard Dressing

Summer Salad

makes 4 servings

What you’ll need:

  • 1 package of organic mixed greens
  • 1/2 cup chopped carrots
  • 1/2 cup chopped tomatoes
  • 1/2 cup blueberries
  • 1/4 cup  sunflower seeds
  • 1 batch Agave-Mustard Dressing

Directions:

  1. Combine all ingredients together in a large bowl. Enjoy right away!
