Vegan Mofo: Sweet New Year Green Smoothie

Last night’s sunset marked the beginning of Rosh Hashanah, the holiday celebrating the Jewish new year. Traditionally on Rosh Hashana, Jewish families eat sweet foods, especially apples, honey and cinnamon-raisin challah to symbolize their wish for a “sweet new year.”  Continuing with The Colorful Kitchen’s smoothie-themed participation in Vegan Mofo, I’m super excited to share today’s recipe- Sweet New Year Green Smoothie.  Let’s all raise our moothies and say L’shanah Tovah!

Sweet New Year Smoothie

makes 2 servings

What you’ll need:

  • 1 banana
  • 2 apples
  • 1-2 cups kale
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 4 ice cubes
  • 1/4- 1/2 cup unsweetened non-dairy milk
  • 1/4 cup raisins

Directions:

  1. Cut one of the apples and half, chop one of the halves into small pieces (save for topping).
  2. Combine remaining 1.5 apples, banana, kale, vanilla, cinnamon, ice and milk in blender until smooth. Pour into cups, sprinkle with remaining apple pieces and raisins.
