Sneaky Protein: Cinnamon Peanut Butter Cookies

As someone who follows a plant-based diet, I’m very aware of the amount of protein I consume.  I love lentils, hemp seeds and edamame, but my favorite way to get enough protein is through my desserts! I’ve shared my recipes for Chocolate Hummus, Power Truffles and Cookie Dough Dip  and today’s cookie recipe is another sneaky way to get more protein into your diet. Completely disguised as a sweet treat, these Cinnamon Peanut Butter Protein Cookies make a great midmorning or afternoon snack. I think they’re best dipped in almond milk, coffee or herbal coffee.

makes about 12 cookies

What you’ll need:

  • 1 cup almond flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup peanut butter
  • 1/4 cup agave
  • 2 tablespoons coconut oil, softened
  • 2 tsp vanilla extract

Directions:

  1. Preheat oven to 350°.
  2. Combine almond four, baking soda, salt and cinnamon in a large bowl. Combine remaining ingredients in a small bowl. Add the contents of the small bowl to the large, and mix until thoroughly  combined.
  3. Line a baking sheet with parchment paper. Wet hands, roll dough into balls 1″ thick and place on baking sheet. Use the palm of your hand to slightly flatten balls (I also used fork to create a criss-cross design) then sprinkle with cinnamon.
  4. Bake for 15-18 minutes, until cookies are lightly browned on edges. Let cool completely and enjoy!

  2. These look great! This is basically just like my 4 ingredient peanut butter cookie recipe, except I roll mine in coconut sugar instead of sprinkling with cinnamon! I love cinnamon and use it daily and I’ll also make these with and sub with almond butter and add vanilla and chocolate chips too, and they are super yummy. I’ll try it sprinkling with cinnamon next time, yum! 🙂

  3. I love this simple recipe. My amendments are to add 1 tablespoon of almond butter for a more nutty flour, and to bake for only 12 minutes. 15-18minutes makes the cookies a little too dry for my tastes!
