Vegan Avocado-Banana Breakfast Ice Cream

It’s officially hot outside and I’ve been eating a lot of ice cream lately. Avocado-Banana Ice Cream to be exact! You know I love my green smoothie bowls, but lately I’ve been really into this totally healthy, vegan, raw, sugar-free ice cream for breakfast. The recipe is so simple, so speedy to put together and super refreshing on hot summer mornings.

To make 2 servings of Avocado-Banana Ice Cream, simply blend 2 frozen bananas, half an avocado and just enough water to help things blend smoothly (start with 1 tbs and add as needed). Of course you can make it fancy by blending in superfoods and adding toppings, so below I’ve included some combinations I’ve tried and loved.
