Raw Vegan Double Fudge Chocolate Brownies (Gluten-Free)

What’s better than chocolate fudge? Double chocolate fudge! Actually scratch that- vegan and gluten-free double chocolate fudge!

Today I’m sharing a seriously rich and delicious dessert recipe, just in time for Halloween. These Raw Vegan Double Chocolate Fudge Brownies are so decadent, fudgey and chocolatey it will be easy to forget that they’re made from totally guilt-free ingredients! Sweetened with maple syrup, you can feel good about indulging without the risk of a sugar-coma (we’ve all been there!). Ingredients
  • 1 cup rolled oats
  • 6 dates, chopped
  • 2 tbs coconut oil, softened
  • 1 tbs maple syrup
  • 1 tbs cocoa or cacao powder
  • ⅛ tsp salt
  • 1 cup cashews, soaked at least 4 hours
  • 1 tbs coconut oil
  • 2 tbs maple syrup
  • 1 tsp vanilla extract
  • 1 tbs cocoa or cacao powder
  • 1 tbs water
  • 1 tbs nut butter of your choice (I used peanut)
  • topping- 1 tbs cream cheese, 1 tbs maple syrup, 1 tbs chopped nuts
Instructions
  1. Pulse oats in blender until powder is formed. Add dates, 2 tbs coconut oil, 1 tbs maple syrup, 1 tbs cocoa and salt and blend until mostly smooth texture is formed (you'll have to scrape the sides down a few times).
  2. Line a baking sheet with parchment paper. Spread mixture out on baking sheet and use your hands to form a rectangle about ½" thick. Place in freezer.
  3. Drain and rinse cashews. Blend with remaining ingredients until completely smooth.
  4. Remove baking sheet from freezer and spread mixture evenly over bottom layer. Place in freezer for at least 30 minutes before slicing into bars.
  5. Prepare topping by mixing cream cheese and maple syrup together. Drizzle over brownies and sprinkle with nuts. Store in refrigerator.
