I can always tell spring is right around the corner when I start to crave raw desserts!

This week it’s finally been warm enough to have the windows open in my apartment and I was inspired to make my first raw treat of the season. Today’s Raw Vegan, Gluten-free Chocolate Cacao Chip Cups will totally satisfy your sweet tooth AND are made of wholesome, energizing ingredients! Seriously, these little guys are out of this world.

Raw Chocolate Cacao Chip Cups, Vegan + Gluten-Free

Ingredients
  • ½ cup cashews (or other nut), soaked at least 4 hours
  • 8 pitted dates, soaked 30 minutes
  • 1 cup oat flour
  • 2 tbs coconut oil, melted
  • 1 tbs maple syrup
  • dash of salt
  • ¼ cup cacao nibs
  • 2 tbs cacao or cocoa powder
  • 1 tbs coconut oil, melted
  • 1 tbs maple syrup
  • 1 tbs cacao or cocoa powder
Instructions
  1. Drain and rinse cashews and dates. Combine with oat flour, 2 tbs coconut oil, 1 tbs maple syrup and salt in blender or food processor until mostly smooth (a little texture is good).
  2. Transfer half of mixture to bowl and stir in cacao nibs.
  3. Blend 2 tbs cacao into remaining mixture to create chocolate layer.
  4. Line a mini muffin tin with baking cups. Press about 1 tbs of chocolate mixture into each cup, then add 1 tbs of cacao nib mixture on top. Place in refrigerator for 15 minutes.
  5. Prepare chocolate shell topping by stirring together 1 tbs coconut oil, 1 tbs maple syrup and 1 tbs cocao powder until smooth.
  6. Remove cups from refrigerator. Drizzle chocolate shell over cups. Return to refrigerator for 15 minutes to let shell harden.

    Well, we’re in the Southern Hemisphere now going into Autumn, but for a change in season I’m motivated to include yoga into my exercise regime again – I remember that it gave me so much energy and made me so connected with my body like never before (and helped me to make better lifestyle and food choices). 😀

    1. Yep, the giveaway is open internationally!! I also find that maintaining a regular yoga practice helps me have more energy and feel connected to my body!

  2. I am motivated to make my health a priority this Spring! During the holidays and the New year, things get so busy that I let my exercising habits slide and usually eat more sweets and junk food. Once the weather warms up, I want to be more active and focus on healthy eating!

    1. I agree that is can be so easy to let things slide during the holidays! I think the most lovely thing about spring is that the warm weather acts as a fantastic motivator!!

  3. Wow these look amazing! And a lot simpler than a lot of those superfood raw fancy recipes with ingredients I don’t have.
    I’m hoping to feel emotionally and physically better by taking better care of my needs, being in tune with what I need and standing up for it, and also working on those difficult to change habits.

    1. Love it! I’ve found that a regular yoga and mediation practice makes a world of difference for me. Even if I just meditate for 5 minutes!

  4. I’d love to win. My body desperately needs nourishment. I have just finished prednisone from an asthma flare and the migraines are almost constant. This would be an incredible way to give my body a head start on healing.

  5. I really want to keep reducing my sugar intake this spring. I’m down to just fruit and stevia but I think I could benefit from reducing those a bit as well. We’ll see!

  6. The number one thing I’m motivated to do this Spring is absolutely destroy my remaining coursework and exams so I graduate with the best degree I’m capable of in June!

  9. The one thing I would like to accomplish this Spring is to start running again and get my 5km under 20mins (again), then to transition into a regular running routine of 12km-5km-8km. I want to achieve this before my Convocation ceremony in June! As well as making friends! I moved to a different province at the beginning of the year and I’ve been so busy with school, I haven’t made very many strong friendships! I guess these are two goals which are currently motivating me on a health and social aspect! tmiller7@live.ca

  10. The one thing I want to do this spring, is stop drinking and concentrate on me for once, I eat organic but drink beer, , I think this could be just what I need

  11. After a particularly stressful winter caring for my husband with advanced liver cancer and his subsequent death, I now need to refocus on nourishing and revitalizing my own body this spring. I have always had an interest in a vegan lifestyle; but have not felt capable or uncertain how to incorporate this in a way that will provide my body with vital nutrients needed to maintain optimum health.

    The most important thing I see that I need to do right now is to learn to let myself take the time to look after me. I need to get healthy and get rid of all my pain and disease symptoms. Right now I don’t feel that I have the time for this. I do though if I just learn that I deserve this and that if I do I will be in a better position to help others even more.

  13. The number one thing I’m going to do for myself this Autumn (I’m from Australia) is research some fall recipes to keep on my plant based journey! We all know spring and summer is a little easier 🙂
