Vegan Eating with Ilene! 7-1-15

When people first find out that I’m vegan and avoid gluten, the next words out of their mouth are usually “but what do you eat??”  I started “Vegan Eating with Ilene!” to show how easy, exciting and delicious it is to adopt a plant-based diet.

It’s been so long since my last Vegan Eating with Ilene post! Even though making food and taking photos is a big part of everyday for me, somehow it keeps slipping to mind to snap a picture at every single meal so I can share it with all of you! The following photos are from last Thursday and I’ve gotta say it was a pretty tasty day…

For breakfast I made a super simple avocado toast on brown rice bread. I just mashed the avo and sprinkled cacao nibs and sea salt on top- voila! I know it sounds a little funky but the crunchy cacao is the perfect addition to avo toast.

Later that morning I went to a crazy cross fit style class at my gym (SO SORE AFTER!) then met up with my friend Talia to check out a new juice bar in Greenpoint.

Botica & Co. is possibly the most beautiful juice bar place I’ve ever been. It’s overflowing with plants, the walls are lined with herbal tinctures and they have FRESH JUICE ON TAP!

I had started with a  kombucha/pineapple/lemon blend juice then Talia and I split a kale salad and a sandwich. Both super yummy and I can’t wait to go back and try everything on the menu.

For dinner I made my super simple, go-to, easy peasy plate. Roasted sweet potatoe and a stir-fry with onions, garlic, tempeh, broccoli, cauliflower and carrots. It’s not glamorous but it’s delicious, filling and easy.

  1. I usually have some kind of fruits for breakfast – mostly bananas 🙂 Than a salad for lunch. For dinner I looove me some baked sweet potatoes 😉 or a salad and always, always fruites inbetween my bigger meals… Right now is cherry season here in Germany and I probably have 1-2 kg of cherries a day … whoops 🙂

  2. Well today, I had kale with onion, celery, stir-friend, with avacodo wedges and I mashed black-eye peas, with mushrooms, onions, sage, black pepper and fried that in little oil and water, The black eye pea mixture was made to look like a sausage,
    For lunch black bean hamburger with salad.
