Ingredients
2 cups kale, shredded
1 tbs olive oil
2 cups corn chips
½ cup vegan cheese
optional- avocado slices and salsa
Instructions
Preheat oven to 400°. Line a baking sheet with aluminum foil.
In a large bowl, toss kale with olive oil until all pieces are covered. Stir in chips, then transfer to baking sheet.
Sprinkle cheese on top.
Bake in oven for 10-13 minutes, until edges of kale are browned. Serve right away with avocado and salsa.
