Smoky Baked Cashew Cheese, Vegan + Gluten-Free

Ingredients
  • 1 cup raw cashews, soaked in water at least 4 hours
  • ¼ cup nutritional yeast
  • 1 tablespoon tamari
  • 2 teaspoons dijon mustard
  • ½ teaspoon liquid smoke
  • 1 clove garlic, minced
  • salt, to taste
  • black pepper, to taste
  • water, as needed to blend
Instructions
  1. Drain and the rinse cashews, then place them in the blender.
  2. Add all the remaining ingredients (add just enough water to help things blend) and blend until smooth.
  3. Line a strainer with cheesecloth. Pour the cheese mixture over the cheesecloth and place the bowl in the refrigerator to sit overnight. The excess liquid will drain into the bowl and you'll be left with a much firmer cheese.
  4. After the cheese as drained, preheat the oven to 350°. Line a baking sheet with parchment paper.
  5. Transfer the cheese to a mini springform pan and use a small spatula to smooth out the top. Bake for 50 minutes, then take the pan out of the oven and carefully remove the cheese from the springform pan. Place the cheese on the baking sheet and return it to the oven for 10 minutes, until the edges are golden and firm.
  6. Let the cheese cool completely before enjoying.
