Chocolate Coated Almond Protein Bites, Vegan & Gluten-Free

Ingredients

  • ½ cup Sunwarrior Classic Vanilla Protein Powder
  • ¼ cup almond butter
  • ½ cup almond flour
  • 2-3 tablespoons maple syrup, added to desired sweetness
  • 2-3 tablespoons almond milk, added as need to blend
  • 1 tablespoon coconut oil
  • dash of salt

  • ½ cup chocolate chips
  • 2 tablespoons sprinkles
Instructions
  1. Combine all the ingredients in a blender or food processor. Blend until smooth.
  2. Line a baking sheet with parchment paper. Use a spatula to transfer the mixture to the baking sheet. Use your hands to press it into a rectangular shape that's about ½" high.
  3. Place the baking sheet in the refrigerator to firm up for at least 20 minutes. When the mixture is firm, use a knife to slice bites that are about 1"-1½" square.
  4. Melt the chocolate chips, either in a double boiler or in a small saucepan on the stove at low heat.
  5. Dip half of each bite into the chocolate, then return it to the baking sheet. Sprinkle the sprinkles on top.
  6. Return the baking sheet to the refrigerator so the chocolate can harden (at least 30 minutes). Once the chocolate is hard, transfer the bites to an airtight container and store them in the refrigerator.
