Green Tahini Sauce+ Big Green Veggie Bowl
When I was in college I had a roommate from Israel who was a really great cook. She taught me how to make authentic hummus and always topped it with a simple tahini-parsley sauce. The addition of the parsley to her sauce added a subtle flavor and not-so-subtle color. Thinking about her sauce while experimenting in the kitchen, I’ve created my own Green Tahini Sauce and what better dish to put it on then a Big Green Veggie Bowl.
Green Tahini Sauce
makes 4 servings
What you’ll need:
- 1tbs gluten-free tamari
- 1/4 cup tahini
- 3 tbs water
- 1 clove garlic
- juice of 1 lemon
- generous handful of parsley
Directions
- Simply combine all ingredients in blender until smooth! Sauce will stay fresh in refrigerator for about 3 days.
You can really use this sauce for anything.. salad dressing, marinade for tofu or vegetables, even try adding it to a green smoothie!
One of my favorite quick and easy dinners is a Big Green Veggie Bowl. It’s perfect when you want a warm, comfort-food type of meal that will you feeling nourished.
Big Green Veggie Bowl
makes 4 servings
What you’ll need:
- 1 tbs coconut oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 head of broccoli, separated into florets
- 1 cup diced carrots
- 1 cup shelled edamame (fresh or frozen)
- 1tbs gluten-free tamari
- 3 cups spinach
- 1 avocado, diced
- 2 green onions, diced
Directions
- Heat coconut oil in a large frying pan or wok at medium-high heat. Add onion and garlic and stir occasionally.
- After 3 minutes turn heat down to medium and add carrots, continuing to stir.
- After 5 minutes add broccoli and edamame and sprinkle with tamari.
- After 3 minutes add spinach and turn heat to low. Cover for 2 minutes then serve in bowls.
- Top with avocado, green onion and Green Tahini Sauce. Yum!
