Quick Snack: Cocoa Dusted Coconut Popcorn
Today’s recipe is a quick snack that I wasn’t planning on putting up on the blog but it ended up tasting so good…I had to share! I made this Cocoa Dusted Coconut Popcorn yesterday afternoon when it was super cold and rainy and I was in the mood for something a little chocolatey but not too sweet. You’ll notice that the ingredient list is pretty minimal and without the addition of a sweetener you can really taste the coconut. But feel free to mix in a tablespoon of agave if your heart desires!
Cocoa Dusted Coconut Popcorn
makes 2 servings
What you’ll need:
- 2-3 tablespoons coconut oil (enough to thoroughly coat the pan)
- 1/3 cup popcorn kernels
- 2 tbs coconut manna
- 2 tbs cocoa powder
- salt to taste
- optional– 1 tbs cacao nibs and/or 1 tbs dried unsweetened coconut flakes
DIrections:
- Heat coconut oil at medium high in a 5-6 quart pan with a lid. Add popcorn kernels and shake. Turn heat to medium. In about 2-3 minutes you’ll hear the kernels beginning to pop. Shake every 30 seconds for about 2-4 minutes until you no longer hear popping.
- Transfer popcorn to a large bowl. If coconut manna is not already softened, place jar in a bowl of hot water and stir. Pour softened coconut manna over popcorn and use your hands or a large spoon to mix. Add cocoa powder, salt and cacao nibs and coconut (if using) and mix until thoroughly coated. Enjoy right away!
