Vegan Eating with Ilene! 3-18-15
When people first find out that I’m vegan and avoid gluten, the next words out of their mouth are usually “but what do you eat??” I started “Vegan Eating with Ilene!” to show how easy, exciting and delicious it is to adopt a plant-based diet.
Welcome back! I’m really enjoying sharing what full days of eating look like for me and it’s been awesome to that others are enjoying it too! Below is all the goodness I enjoyed last Thursday, when I was working at home for most of the day.
I know, I know, I’m getting boring with all the oatmeal. I promise to switch it up soon, I just really love how energized it helps me feel! This morning added apple cubes, cacao nibs and peanut butter. Mmmm….
It finally started to feel a little warmer (the temp went above 50!!) so a salad sounded really good for lunch. I decided to make the taco salad from my meal plan. I also had tofu ricotta and salsa on the side- stay tuned, I’ll be sharing the recipe for all this goodness on the blog very soon!
For dinner I decided to clean out the refrigerator and Ross and I had kind of a hodgepodge meal. I made apple and grilled cheese sandwiches (using Daiya vegan cheddar), sweet potato fries and steamed broccoli.
So there you have it! It wasn’t a fancy day but I thoroughly enjoyed each meal. I promise I’ll share a more exciting breakfast next time. What’s your favorite go-to meal to start the day?
