Healthy Holiday Cookies, Vegan & Gluten-Free

Is it just me or are everyone else’s pants also fitting a little tighter these days?
I usually work on recipes for the blog about a month before I post them so I’ve been in full holiday mode for quite a while now! Not that I’m complaining about celebrating the season with cookies, brownies and more cookies…but today I’m very excited to share a sweet treat that’s a little lighter.
I’ve teamed up with Better Body Foods to bring you today’s Vegan & Gluten-Free Healthy Holiday Cookies! They’re filled wholesome ingredients that make them good enough to eat for breakfast… and delicious enough to crave them for dessert.
Instead of flour, these cookies are made with oats, LIVfit Superfood, PBfit and Chia Seeds so they are packed with protein and fiber. I love the soft and chewy texture with the creamy peanut butter frosting (you’re going to LOVE the frostin!) on top. The recipe calls for raisins or chocolate chips but I think a combo of both is the way to go!

- ½ cup rolled oats
- ½ cup LIVfit Superfood
- ¼ cup PBfit
- 2 tbs Organic Chia Seeds
- 1 tsp ground cinnamon
- ½ tsp baking powder
- ⅛ tsp salt
- 1 ripe banana, mashed
- ¼ cup agave
- ¼ cup + 1 tbs non-dairy milk
- 2 tbs coconut oil, melted
- 1 tsp Organic Bourbon Madagascar Vanilla
- handful of chocolate chips and/or raisins
- 2 tbs PBfit
- 1 tbs water
- 1 tbs coconut butter
- 1 tbs agave
- Preheat oven to 350°. Grease a baking sheet.
- In a large bowl, whisk together all dry ingredients.
- In a small bowl, stir all wet ingredients together until smooth.
- Add contents of small bowl to large, and stir until thoroughly mixed. Fold in chocolate chips and/or raisins.
- For each cookie, roll about 1.5 tbs of dough into a ball and slightly flatten it on cookie sheet.
- Bake for 10 minutes. Remove from oven and let cookies cool completely.
- Prepare Peanut butter frosting by stirring all ingredients together in a small bowl. When cookies are cool, spread or drizzle frosting on top.
