Easy Watermelon Mint Salad, Vegan + Gluten-Free
I’m super excited to share my first (unofficial) summer recipe today! With a new baby in the house, it’s been a looong winter/rainy spring, and my entire family is so thrilled to finally be getting tons of outside time in the sun.
Now that we finally have a house with a yard, my dream of having a garden has finally come true! If you keep up with me on Instagram you’ve probably already heard me talking about how obsessed I am with our tiny veggie plants. We’re still a ways away from harvesting the tomatoes, greens, zucchinis and cabbage we planted, but our herb garden is thriving!
Check out that gorgeous mint! It was only a few inches tall when we planted it but now we’ve got mint for days. Hello mojitos, mint chocolate banana ice cream (stay tuned for that recipe) and today’s treat: Vegan & Gluten-Free Easy Watermelon Mint Salad.
There’s no better way to describe this salad other than FRESH! It’s sweet, savory and totally refreshing. The ingredient list is super simple, but the flavors and textures come together to create a magical salad that feels downright fancy. It’s got a little kick to it from the red onion and pepper, so serve it as a sweet dish dish or savory dessert.
Baby V thought it was so hilarious that there was “salad” (what she calls most green vegetables) on her watermelon and gobbled it right up. She likes red onion in small amounts, but for kids and other folks who find them too intense, this salad is still delish without it.
- 4 cups seedless watermelon, cut into 1" pieces
- 1 cup thinly sliced cucumber
- 2 tablespoons chopped fresh mint
- 1 tablespoon chopped red onion
- 2 tablespoons olive oil
- salt and pepper, to taste
- Toss all the ingredients together in a large bowl. Enjoy fresh!
