Daiya Cheezy Mac- Easy Vegan Dinner!
If you’ve spent any time on the blog you probably already know I’m a major vegan mac n’ cheese fan. If you’re new around here, let me tell you that with a 3-year-old and 1-year-old in my house, it’s probably no surprise that we eat a lot of mac n’ cheese!
Enter Daiya Cheezy Mac.
I’ve been a fan of Daiya Cheezy Mac since their classic Cheddar Style first hit the grocery store shelves, and I’m SO excited to partner with Daiya to showcase all five of their flavors: Four Cheeze Style with Herbs (new!), Bac’n & Cheddar Style (new!), Deluxe Alfredo Style (pictured), Deluxe White Cheddar Veggies and Deluxe Cheddar Style (pictured).
All of the flavors are free of dairy, gluten and soy (yay!). Since I’m basically a professional mac n’ cheese eater, believe me when I say that every single flavor delicious (although the Alfredo may be my personal favorite). And a box can be prepared in less than 10 minutes!
Like all of Daiya’s products (see a few others I like here), I love that the Cheezy Mac reminds me of the boxed mac n’ cheese I ate as a kid, but that it’s plant-based and made with much cleaner ingredients. You can find Daiya’s products in over 25,000 grocery stores in the U.S., including Sprouts, Target, Kroger, Safeway, Publix, and most natural grocery stores.
Now, let’s talk about the way I like to jazz my flavors up. Since the packages come with a generous amount of sauce, I’ve found that there’s more than enough to cover everything when you mix veggies in. In the name of keeping things super simple, I like to add frozen veggies to the pot when the pasta is cooking to bulk up the meal without adding any extra cooking time (see my method in the instructions below). It’s also nice to know that as long as I’ve got a bag of frozen veggies in the freezer and a box of Cheezy Mac in the pantry, I can whip up dinner that’s guaranteed to be a hit with the whole family in under 10 minutes.
Baby V and Baby L are currently loving the classic frozen mixed veggie combo of carrots, peas and green beans (as shown in the photos), but I’ve followed the same recipe with frozen (and fresh) broccoli, kale and cauliflower, and it’s always a hit.
We’ve also been known to top our Cheezy Mac with tempeh bacon, baked tofu, sauerkraut and kimchi- the possibilities are endless!
- 1 package ofDaiya Cheezy Mac
- 1 cup frozen mixed veggies
- *optional- sprinkle of nutritional yeast and paprika
- Bring 8 cups of water to boil in a medium pot.
- Add the pasta and frozen vegetables and cook until tender, stirring occasionally. The Alfredo Style pasta cooks for 5-6 minutes, while the Cheddar Style cooks for 7-8 (follow the instructions on the package).
- Using a colander, drain the pasta and vegetables, then return them to the pot. Squeeze in the sauce packet and stir until everything is mixed. Serve warm and sprinkle with nutritional yeast and paprika if desired.
