Vegan Berry Cheesecake Brunch Bagels

Yep, you read that recipe title correctly- it’s brunch time, friends!

Being cooped up at home for almost 3 months definitely has me missing eating out at restaurants, especially brunch. While I do have quite a few brunchy recipes in my arsenal, my family has very quickly tired of eating the same things all the time.

That’s why my latest collaboration with Daiya could not have come at a better time! You already know I love Daiya’s Cheezy Mac and Cutting Board Shreds, and all of their vegan cheezy products are my favorite because they melt so well, but today I’m excited to share a super easy recipe using their Cream Cheeze Style Spread.

These Vegan Berry Cheesecake Brunch Bagels really are such a treat (take Baby V’s word for it- she totally lost her 3-year-old mind over them!). Using only 6 ingredients, they take just 10 minutes to prepare, but feel so decadent and fancy.

The secret ingredient is Daiya’s Strawberry Cream Cheeze Style Spread , which tastes just like berry cheesecake filling- so most of the work is already done for you! Topped with berries, a little chocolate drizzle and powdered sugar- the end result is totally dessert-like and fun, while still being relatively low on sugar.

Daiya’s Cream Cheeze Style Spreads also come in 3 other flavors: Plain, Chive & Onion and Garden Vegetable, and they are all delish! I especially love the Chive & Onion on a savory bagel with my Carrot “Lox.”

Ingredients
Instructions
  1. Slice the bagels in half and toast them.
  2. Spread about 1 tablespoons of Daiya Strawberry Cream Cheeze Style Spread over each bagel half. Top with chopped strawberries and blueberries.
  3. Melt the chocolate chips, either in the microwave or in a small saucepan on the stove. Drizzle the melted chocolate over the bagels. Sprinkle powdered sugar over everything and enjoy.
