Vegan Avocado Chocolate Chip Cookies
I’m all about adding avocado to pretty much anything. It’s one of those magical ingredients that makes just about any dish even better. Recently I did a little experiment with adding avocado to chocolate chip cookie batter. The results- today’s Vegan Avocado Chocolate Chip Cookies- were a batch of fluffy, cloud-like cookie-pillows! Vegan Avocado Chocolate Chip Cookies

Ingredients
- 1 cup all purpose gluten-free flour
- ¼ tsp baking soda
- ⅛ tsp salt
- ¼ cup mashed avocado
- 3 Tbs coconut oil, melted
- 1 tsp vanilla extract
- 2 Tbs brown rice syrup or maple syrup
- handful of chocolate chips
Instructions
- Preheat oven to 350 degrees and grease a baking sheet.
- In a large bowl, whisk together the flour, baking soda and salt.
- In a small bowl, stir together the avocado, coconut oil, vanilla extract and brown rice or maple syrup. Add the wet ingredients to the large bowl and stir until thoroughly mixed. Fold in the chocolate chips.
- Wet hands and form batter in to 1" balls. Place on a cookie sheet and then gently flatten with the palm of your hand.
- Bake 11-13 minutes until the edges are firm. Remove from the oven and allow to cool before enjoying.

i USED OATMEAL FLOUR, AND BROWN RICE SYRUP. DEFINETLY WAIT FOR THEM TO COMPLETELY COOL- THEY TASTE MUCH BETTER THEN!

I use vegetable oil instead of coconut oil. Can’ alergic to coconut The recipes sounds good and interestinc
I haven’t tried it with vegetable oil, but perhaps a very neutral oil with little flavor? Or vegan butter (like Earth Balance) would be a great sub!

This recipe is absolutely incredible! I always seem to have spare avocados lying around on the verge of going off, so this is the perfect way to use them up! I also love how simple and clean the ingredients are, with no added refined sugar. The cookies were a big hit with my whole family (:

Can you substituer the glutenfree flour for regular flour?
I haven’t tried it but I would guess it would work!
