Ingredients
dry
  • 3 tablespoons spelt flour
  • 1 tablespoon coconut sugar
  • ¼ teaspoon baking powder
  • dash of salt
wet
  • 2 tablespoons unsweetened nondairy yogurt
  • 2 teaspoons lemon juice
  • ¼ teaspoon vanilla extract
  • 2 teaspoons jam
topping options
  • spoonful of nondairy yogurt, ice cream or coconut whipped cream
  • 1-2 teaspoons jam
Instructions
  1. In a mug, stir the dry ingredients together.
  2. Add the yogurt, lemon juice and vanilla extract. Spoon the jam on top.
  3. Cook in the microwave for 1 minute. Add your favorite toppings and enjoy warm with a spoon.
