Vegan Pumpkin Spice Oatmeal Cookies

- 1 tbs ground flaxseed
- 3 tbs warm water
- 1 cup spelt flour
- 1 cup rolled oats
- ⅔ cup coconut sugar
- 1 tbs pumpkin spice
- ½ tsp baking soda
- ⅛ tsp salt
- ⅓ cup coconut oil, melted
- ⅓ cup pumpkin puree
- ¼ cup non-dairy milk
- 2 tsp vanilla extract
- Preheat oven to 350°. Grease a baking sheet or line it with parchment paper.
- Prepare flax "egg" by stirring together flax and water together in a small bowl or cup. Let sit for 10 minutes before using.
- In a large bowl, whisk together all dry ingredients.
- In a small bowl, stir flax "egg" and all wet ingredients together until smooth. Add contents of small bowl to large and stir. Fold in chocolate chips.
- Scoop a little more than 1 tablespoon of batter onto the baking sheet for each cookie.
- Bake for 11 minutes, until edges are slightly firm (they'll firm up more as they cool). Let cool before enjoying.
