Vegan Mofo: Sunshine Energy Smoothie
Yesterday afternoon I found myself starting to feel a little sluggish around 4:00 pm. Earlier in the day I had worked out and ran around town doing errands and I realized I was probably hadn’t drank enough water and was a little dehydrated. I’ve been reading David Wolfe’s book The Sunfood Diet Success System, in which he talks about eating and drinking fruits and vegetables with high water percentages for hydration. Oranges are about 85% water so I decided to make an orange-based version of my ACV Energizer…the Sunshine Energy Smoothie!
The Sunshine Energy Smoothie combines the hydrating effect of citrus fruit with the energy boosting power of ACV (see this post for more info on the many benefits of apple cider vinegar). It’s a super yummy, perfectly balanced combination of sweet and tangy flavors and after drinking it I felt instantly rejuvenated and was able to get back into the flow of my day.
Sunshine Energy Smoothie
makes 2 servings
What you’ll need:
- 2 oranges, peeled (I used navel)
- 2 tbs apple cider vinegar
- 1 tbs agave
Directions:
- Combine ingredients in blender until completely smooth and enjoy!
I also tried sprinkling a little unsweetened dried coconut on top…yum!
