Vegan Avocado Chocolate Chip Cookies

I’m all about adding avocado to pretty much anything. It’s one of those magical ingredients that makes just about any dish even better. Recently I did a little experiment with adding avocado to chocolate chip cookie batter. The results- today’s Vegan Avocado Chocolate Chip Cookies- were a batch of fluffy, cloud-like cookie-pillows! 1. OMG these look AMAZING and I just bought a new bottle of avocado oil at Costco. I’m going to bake these this week for sure. Thank-you for posting.

  2. THESE CAME OUT GREAT!
i USED OATMEAL FLOUR, AND BROWN RICE SYRUP. DEFINETLY WAIT FOR THEM TO COMPLETELY COOL- THEY TASTE MUCH BETTER THEN!

  3. I love this recipe! I made chip- free cookies cause I don’t have any chocolate left, and they were AMAZING! Thanks for the recipe

    • I haven’t tried it with vegetable oil, but perhaps a very neutral oil with little flavor? Or vegan butter (like Earth Balance) would be a great sub!
