Chilled Avocado-Cucumber Soup
Let’s continue our season of raw soups with a classic summer recipe: Chilled Avocado-Cucumber Soup. Like the other blended soups we’ve recently made, this dish is not only delicious, but the preparation time is less than five minutes!
Avocados are one of the healthiest foods we all should be eating every day. Did you know that one avocado has twice the potassium of a banana? They are also rich in fiber, Vitamin E, B-vitamins, folic acid and are known to lower cholesterol, blood pressure and prevent cancer and heart disease (to name a few benefits!).
For a quick snack I like to eat half an avocado sprinkled with sea salt and a drop of olive oil. Today’s recipe has just a few more ingredients. This soup is cool and refreshing- enjoy it on it’s own or serve it alongside my Summer Salad!
Chilled Avocado-Cucumber Soup
makes 2 bowls or 4 cups
What you’ll need:
- 1 cucumber
- 1 ripe avocado
- 1 clove garlic
- juice of half a lemon or whole lime
- 1 tbs tamari
- salt and pepper to taste
*optional- tahini or Tofu Sour Cream to drizzle on top
Directions:
- Chill cucumber and avocado in refrigerator ahead of time. Combine all ingredients in blender until completely smooth. Drizzle with tahini or Tofu Sour Cream and enjoy!
