Rainbow Pride Parfait
This past week was Pride Week, one of the most colorful celebrations of the year. This year rainbow flags flew even higher with the overturning of DOMA, so let’s enjoy a Rainbow Pride Parfait topped with Coconut Sweet Cream in honor and celebration of marriage equality!
Coconut Sweet Cream
makes 6 servings
What you’ll need:
- 1 box extra-firm silken tofu
- 1/4 cup coconut milk
- 3-4 tbs agave
- 1tbs vanilla extract
- 1/2 cup dried unsweetened coconut
Directions
- Combine tofu, coconut milk, agave and vanilla extract in blender. Blend until completely smooth.
- Transfer to bowl and mix in dried coconut.
- Chill in refrigerator for at least 1 hour before serving.
Rainbow Pride Parfait
makes 4 servings
What you’ll need:
- 3/4 cup red seedless grapes
- 3/4 cup blueberries
- 2 kiwis, peeled and diced
- 1 large banana, cut into slices
- 2 clementine oranges, sections separated
- 3/4 strawberries, sliced
- 1 batch of Coconut Sweet Cream
- 2 tbs dried unsweetened coconut
Directions:
- Select 4 clear jars, wine glasses or parfait cups.
- Layer fruit in jars or glasses in the following order: grapes, blueberries, kiwis, bananas, oranges, strawberries. Make sure to leave at least an inch of space on top.
- Top with Coconut Sweet Cream and sprinkle with dried unsweetened coconut. Keep refrigerated until ready to serve. Enjoy!
