Vegan Eating with Ilene! 2-25-15
When people first find out that I’m vegan and avoid gluten, the next words out of their mouth are usually “but what do you eat??” I began “Ilene’s Vegan Eats” to show how easy, exciting and delicious it is to adopt a plant-based diet.
Welcome to the second installment of my new “what I ate wednesday” posts, aka Vegan Eating with Ilene!
Ross and I have been having regular ole oatmeal for breakfast quite a bit lately so I decided bring back his favorite kind- Carrot Cake Oatmeal. I am seriously all about this recipe right now and we’ve had it for breakfast everyday since.
For lunch I had a tempeh “tuna” salad sandwich with sauerkraut and avocado…plus a little extra since I was very hungry after my yoga class! Tomorrow I’ll be posting this super simple recipe so stay tuned!
That afternoon I stocked up on groceries was super excited to find oyster mushroom at my local food coop. For dinner I made a stir-fry with the mushroom, broccoli and bok choy, cauliflower mashed potatoes with gravy and a quinoa/lentil.
After dinner we watched the Oscars and snacked on this amaaaaazing salted caramel vegan ice cream. Overall it was a totally tasty day!
