Vegan Cheesy Kale Nachos
Major snack announcement! Vegan Cheesy Kale Nachos are officially my new go-to party appetizer and movie night snack. Baked Kale Crisps have long been a staple in my kitchen and recently right before I was about to make a batch I decided to get a little creative and whipped up these fun nachos. The recipe is super easy to make (only 4 ingredients) and I love the crunchiness of the kale and chips together.
For the cheese, I used Daiya Chedder Style Shreds. When I buy corn chips I always make sure to look for ones with a non-gmo label, since corn is one of the most commonly genetically modified foods.
For the ultimate snack experience, I served the nachos with avocado slices and salsa…so good!
Vegan Cheesy Kale Nachos

Ingredients
- 2 cups kale, shredded
- 1 tbs olive oil
- 2 cups corn chips
- ½ cup vegan cheese
- optional- avocado slices and salsa
Instructions
- Preheat oven to 400°. Line a baking sheet with aluminum foil.
- In a large bowl, toss kale with olive oil until all pieces are covered. Stir in chips, then transfer to baking sheet.
- Sprinkle cheese on top.
- Bake in oven for 10-13 minutes, until edges of kale are browned. Serve right away with avocado and salsa.
